Each of the eight chapters written by Indian authors focuses on specific functional foods in their regions: conjugated linoleic acids, dietary fibers, millets, coriandrum sativum, cultivars of rice, antioxidants, and essential oils. One chapter written by two Australian authors focuses on antioxidants in metabolic syndrome, and one chapter was written by two individuals from Spain focuses on food allergies and food poisoning. Technical chapters highlight the chemical structures of functional foods, suggesting that researchers may be the best audience.

As diet is one of the major ways consumers use to manage their health, this research has wide-ranging implications in a variety of fields.
Ten chapters examine the advancements made and issues raised through various streams of nutritive research concerning antioxidants, dietary fibers, food allergens and more. As in other books in this series, each chapter begins with an abstract that summarizes the impetus behind the research to follow. Editor/Author Biographies
Sailas Benjamin, a renowned industrial and environmental biotechnologist, has served University of Calicut as the Director of Research. Being a leader of several research projects, Prof. Benjamin has published several research papers in international and national journals of high repute, and several industrially-significant novel strains of bacteria/fungi were discovered and characterized; apart from 5 patents and 1 book to his credit. He is one of the pioneering researchers pertaining to the bioremediation of hazardous phthalates. Having completed his M.Sc. Degree (University of Kerala), he secured his M.Phil Degree (Cytogenetics) from the same University. In 1998, he secured his Ph.D. Degree (Biotechnology, Cochin University of Science and Technology, Kerala; CUSAT) under the supervision of the world renowned biotechnologist, Prof. Ashok PANDEY at National Institute for Interdisciplinary Science and Technology (NIIST), Thiruvananthapuram. In between, Prof. Benjamin also secured Post-graduate Diploma in Public Relations and Journalism (PGDPRJ), from the Public Relations Society of India. He is the recipient of many national and international awards/fellowships, serving as Member of Editorial Board of prestigious International Journals such as Advances in Enzyme Research, SM Journal of Nutrition and metabolism, and also the recipient of prestigious PDFs from Japan (JST, worked at National Food Research Institute under renowned scientist Dr. Chikafusa FUKAZAWA); Germany (DFG worked at University of Muenster under renowned Professor Dr. Friedrich SPENER); Research Fellowship from India (CSIR), Fellow of the International Society of Biotechnology (FIBST), Invitation Fellowship from JSPS, Government Japan, etc.
